Banana Popsicles – A Summer Hit!
Banana Popsicles are an absolute winner for summer and a great activity to make with kids.
They are on the Niño ELA Summer Menu and are always a big hit. They make an excellent snack or dessert option after dinner. Super easy to make and great to have on hand in the freezer for hot days and summer nights.
Bananas are rich in soluble fibre, potassium, vitamin B6, vitamin C and magnesium. Coating them in a good quality dark chocolate provides a sticky base for delicious toppings such as coconut flakes, chia seeds or nuts. Choose a chocolate with 70% – 85% cocoa content, which will be rich in antioxidants, minerals, polyphenols and flavanols. Chocolate also contains tyrosine, the precursor to the neurotransmitter dopamine which plays a role in our mood regulation and pleasure – hence why chocolate can feel so joyful!
Banana Popsicles Recipe
Makes 4
Ingredients

2 firm bananas, chopped in half (one banana will make 2 popsicles)

1 tablespoon cream
-
150g dark chocolate, broken into pieces
-
Toppings of choice (see below)

4 wooden icy pole sticks (available from most craft stores and some supermarkets)
Method

Line a baking tray or other flat try with a piece of baking paper. Choose a tray that will fit comfortably in your freezer. Chop bananas in half and push icy pole stick into the flat end of the banana, (approximately 1/3 of the stick). Set aside.

Place toppings on individual small plates to roll bananas in later.

To make chocolate ganache: In a small saucepan heat cream until it starts to bubble. Add chocolate and turn heat to low for about a minute then turn off heat. Let chocolate sit to melt for a couple of minutes, then stir.

Holding the icy pole stick, dip banana into chocolate and then roll gently in chosen topping. Lay on baking paper. Repeat until all bananas are done. Place in freezer for a few hours or overnight.
